Just set the control to the desired level of heat and just come back every now and again to check that the food is cooking correctly. When cleaning your Viking smoker grill please allow the grill to cool down completely before removing the smoker grill cooking grates. Never pour water over the hot grates, this will most definitely damaged and probably shorten the life span of the grates. Never wait a day or two to clean the grates. The dirt and the left over food particles could become somewhat nasty during that time.

Now that the grates have cooled down, remove and place them in soapy water for a little while. Soaking in soapy water will help soften and loosen any food particles that are attached to the grates. When the food residue is loose enough use a stiff wire brush and gently remove any build up of food and grime. You also need to clean the burners on your Viking smoker grill and with a charcoal grill you will need to remove the coal grate and brush in the inside of the grate. To clean the burners on a grass grill you should remove the lava rocks, briquettes or the metal flame burner. You could if you wanted too wash the metal flame burner with warm soapy water. Making sure you rinse well and let air-dry for assembling together.
